There are all kinds of recipes to make your own curry paste and I certainly encourage you to make your own - inevitably you need to find a well stocked asian market to collect the ingredients to pull it off. Having conquered the recipe a few times I now reach into the refrigerator to deploy the pre made stuff.
For a long while I used [amazon asin=B005NEXK6Y&text=Maesri] but inevitably needed only a tablespoon or two and my freezer would be littered with tablespoon sized chunks of leftover curry wrapped in saran wrap (curry ice cubes anyone?)
I’ve since switched to Mae Ploy curries that comes in a smallish container - you scoop out what you need and put in back in the refrigerator.
