Sambal holds a permanent spot in my refrigerator. A teaspoon added to a sauce will provide a nice dash of heat and it has a nice acidic bite that makes it an easy substitute for most bottled hot sauces.
Sambal is an Indonesian chili sauce - Oelek is the raw red chili variant (of which there are many)
Some grocery stores now carry Sambal - if not try your local asian market or talk nicely to your grocer (or order online)
